Eclectic Parent

With the birthday party on Saturday I forgot to write that we’d picked up this week’s veggies from our CSA. Spinach, mixed lettuce, new spring red onions, fresh garlic (not dried), more beets, more potatoes, more dill, dried beans and kholrabi.

With the whole house torn apart because of the floor - still - we haven’t been cooking much. Now I have much of last week’s and all of this weeks veggies to use. I need ideas. I’m roasting beets right now and boiling potatoes for dill potato salad for tomorrow. I think I may throw the roasted beets in with some lettuce and goat cheese. hmmm, now what do I do with swiss chard and kholrabi?
